Tahini Brownie Cookies

OBSESSED with these. they taste too incredible to be the easiest cookie recipe ever. the tahini makes these so gooey on the inside and crispy right on the outside… ugh. Ingredients (makes 9 cookies)

  • 1 T ground flaxseed + 2.5 T water

  • 1 C tahini

  • 1/2 C granulated monk fruit (or sweetener of choice)

  • 1/3 C maple syrup

  • 1/2 C cacao powder

  • 1 t cinnamon

  • handful of vegan chocolate chips


Instructions

  • combine your flaxseed and water and set aside to gel.

  • mix flax egg with tahini, sweetener, and maple syrup. add-in your dry ingredients and fold to combine until a thick dough ball forms.

  • chill in the fridge for at least one hour to firm up.

  • preheat oven to 375F. as it’s warming up, roll your dough into cookie balls and place onto a nonstick baking sheet. press down to flatten the tops.

  • bake for 20 minutes. make sure to let the cookies cool completely (at least one hour) before serving! hard, i know. but worth it.
